Breakfast Cookies

There's something about breakfast and cookies in the same sentence.  It spells WONDERFUL.  :-)

The following is an adaptation of a recipe I found a few months back on, the original of which can be found here.  And yes, it really does say bacon.  Mmmm...

Breakfast Cookies
  • 1/2 cup butter, softened
  • 1/2cup sugar
  • 1 egg
  • 1 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 10 bacon strips, cooked and crumbled (or approx. 2 good handfuls of chopped)
  • 2 cups raisin bran (pick out most sugary raisins or just use bran flakes)
  • 1/2 cup raisins


  1. In a mixing bowl, cream butter and sugar. Beat in egg. Add flour and baking soda; mix well. Stir in bacon, bran flakes, and raisins. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets.  Makes between 10 and 13 big cookies
  2. Bake at 350 degrees F for 15-18 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. Store in the refrigerator.... if they last that long.  :-)

That was breakfast this morning!  Be careful, though, because they are mildly addicting, and you might find yourself eating them for lunch and snacks, too.  ;-)
